Well I don't have a clue but I know that NOAH uses an arc as a part of its logo as in NOAH and the arc. So basically I don't have a clue and I wouldn't even know where to find out.

Pro Wrestling NOAH is a Japanese professional wrestling promotion, founded in 2000. It was formed by former All Japan Pro Wrestling stars led by former champion Mitsuharu Misawa. The "NOAH" in the name alludes to the Biblical story of Noah, in which the people and animals in the ark survive the flood and make a new beginning in the world, a story which was seen as a parallel to the wrestlers' departure from All Japan. NOAH's promotional symbol, an ark with a dove holding an olive branch, refers to this.
That is from Wikipedia. So apparently it doesn't stand for anything.

The word 'NOAH' in Pro Wrestling NOAH denotes biblical symbolism and is in no way intended to be perceived as an acronym. The concept behind the name makes sense if you understand the company's origins. The promotion was founded in 2000 by then AJPW Booker/Headliner Mitsuhara Misawa. After the death of All Japan's Founder Giant Baba AJPW was in a state of inner turmoil. An internal schism had developed between Ms. Baba (who inherited control of the company upon her husband's death) and Misawa...to whom the bulk of the talent was loyal. The issues at stake included money, status and creative direction. Things came to a head when Misawa led a mass exodus of All Japan's talent roster and founded a new promotion based off of the legacy of the parent...called Pro Wrestling NOAH. The name was chosen to present the promotion's roster as 'survivors' of the now destroyed 'ark' of AJPW. They were the 'true purveyors' of Baba's creative vision (the King's Road style). From a marketing perspective the goal was to 'take' as much of the pre-existing AJPW audience as quickly as possible. The 'spiritual' element was used to give the impression to long time fans that the venerated 'God like' Baba would be dismayed at what AJPW had become after his death and he would support 'Noah/Misawa' for taking a righteous path and continuing his legacy 'away' from the now corrupted 'vessel/promotion'. Whether one buys into the hype or not...looking back 6 years from it's inception NOAH has become more profitable than what remains of All Japan.
LWPD (below is the official colorized symbol of Pro Wrestling NOAH....notice the tip of the black _N_ illustrates a protruding ark with a white dove hovering above while extending an olive branch...the emerald green background represents not only Misawa's traditional color...but the Earth and a hope that the survivors of what once once a flourishing All Japan will find prosperity in their New Beginning)

I don't understand why they don't write it Noah instead of NOAH. It is always capitalized.

The Japanese language uses both the western and its own alphabet (and to a certain extent the Chinese one as well), so sometimes a word will be capitalized to indicate that it is to be written in the western alphabet, to avoid confusion. Other times it's really just to make it look cool.
