Just kind of wondered about this today as I was watching ECW from Tuesday on Tivo. Off the top of my head not thinking this is the first 5 that popped in my head. These are all matches I saw while they were happening, usually the excitement level is completely different than watching it recorded.
1-Hogan vs The Rock (Wrestlemania) Cant tell you how bad I wanted Hogan to win after Hulking up.
2-Cena vs RVD (ECW ONS) The energy in the arena was unreal.
3-Austin vs HHH 3 Stages of hell (I think No Way Out) Was shocked HHH won.
4-Team WWE vs The Alliance (Survivor Series) Always loved the old school format.
5-Cena vs Umaga (Royal Rumble this year) Loved the no rules format and the end was pretty unique.
I could probably think of more, these were just some I thought of was interested in some of your guys picks.

Shawn v Triple H Summerslam - Not sure which year . Where Triple H had the sick look at the end ?
Backlash (Raw Ch) Beniot v Triple H v Shawn
Undertaker v Randy Orton at Wrestlemania
JBL v Eddie G - Forget PPV , it was before Great American Bash PPV . Where JBL won by Dq and Eddie had a nasty cut on head .

My favorites in the last ten, off the top of my head...
Austin vs. Rock (Wresltmania 17) - Stone Cold and McMahon in cahoots, what?
Rock vs. Hogan (Wrestlemania 18) - I was in a room divided, half Rock, half Hogan, unfortunately my guy, lost.
Mankind vs. Undertaker (King of the Ring 98) - Hell in a cell with Foley taking huges bumps, what's not to love.
Edge and Christian vs. Hardy's vs. Dudley Boyz (Wrestlemania X18??)(TLC II) - While the original was cool, I liked the second one even better. Involvement from Lita, Rhino, and Spike was needed to push it to the limit.
JBL vs. Big Show (No Way Out 2005) - I've seen alot in wrestling and while I knew JBL would retain the title, I didn't know how, but crawling out from the ring while in a cage match...genius.

Bret Hart - Mr. Perfect -- SummerSlam '91. Bret wins 1st I-C Title
Hogan - Ultimate Warrior - WM 6
Hogan - Rock - WM 18
Austin - Rock - WM 17
Hogan - Andre - WM 3
Cena - Umaga - Royal Rumble '07
Rick Rude - Ultimate Warrior - WM 5 - Rude wins I-C Title
Bret Hart - Yokozuna - WM 9 - hated Hogan winning the title afterwards but Hart was great against the gigantic Yoko!
British Bulldogs - Dream Team - WM 2 - Bulldogs win 1st tag titles. I was in elementary school and thought this was one of the best matches ever at the time.
Bret Hart Davey Boy Smith - Summer Slam '92 - DBS wins I-C Title in Wembley Stadium.
