A VERY tough question, as I'm sure that for many of us this changes all of the time depending on mood, day of the week, etc. To name one match as superior to every match ever seen is a tall order indeed.
Off of the top of my head, I would probably say the Bret Hart - Steve Austin match from WM XIII is my all time favorite match. From a historical perspective, as well as from the tremendous crowd reaction, this match stands out above practically all others. And the work in the ring is absoultely tremendous from both of these competitors.
In addition, the 2/3 falls match between Flair and Steamboat is another match that stands out to me and is equally enjoyable each time I watch it. You cannot go wrong with any of the three most famous matches between these two, however, but this one was always my favorite.
Recently, no match has provided me more pleasure than Bryan Danielson - KENTA from Ring of Honor this year. I get goosebumps each time I watch it and always notice subtle things that I missed in previous viewings. I know many will question how this match seen by relatively few people could be mentioned with other, more well known classic matches. But to see this match, including the yearlong build, is pure perfection in my humble opinion.
I also have to mention Mitsuharu Misawa - Kenta Kobashi from 1998, as this match turned me on to "strong style" wrestling in Japan, which is obviously the inspiration for promotions such as Ring of Honor. Just a hard-hitting masterpiece.
So many great matches, I could probably go on all day.

Bret Hart vs. Mr. Perfect - Summer Slam '91. Bret wins his 1st I-C title.
Great ending as Hart blocks a leg drop to the groin and turns it into the Sharpshooter.
Close second to Hogan - Warrior - WM VI

Also, as far as being there in person it would have to be Steamboat/Flair as a close second when Steamboat won the title. We had great seats ringside and were on the cameraside. It's weird seeing me from 18-20 years ago when I see those clips. I just wish I could find the whole PPV on DVD. As far as other matches, the Razor Ramon/HBK ladder match is my other favorite.
