I think the typical structure of a COTG card wouldn't lend itself to a boxing format. It would have to look somewhat different and have different mechanics to take everything into account. And I'm probably not the guy to figure that out.

yeah, but a boxer on the ground would have no chance. And an MMA fighter against a professional boxer... remember Muhammad Ali vs. Antonio Inoki?

I think Tom told me once that he had designed a similar simulation game for boxing. Hey Tom, how about putting one out . I would love to get one and design some of the boxing legends. A whole bunch of years ago, when I was in junior high and high school (so about 1976 or 77, roughly), I had a dice-based boxing game that I really liked. It was called Data Boxing. The company that produced it was Gamecraft. I have no idea where you could get these games now, but it shows that a dice-based boxing game is possible to do well.
