I have always read about them in PWI and seen tapes of them. I just never really understood the format, just wondering what some of you guys knew about the Grand Prix, Super J Cup, and Champions Carnivals, and other tournaments overseas. I'd really like to use them in my cotg if I like the setup.

The Super J Cup is simply a regular tiered tournament of the best Junior Heavyweights in the World (that will participate). It's basically a King of the Ring for Juniors. I highly recommend checking out the 1994 edition (recently available on DVD). Benoit fights Great Sasuke in the finals in one amazing match.
I've read about the other tournaments you mention but I don't know enough about them to comment.

The Champion Carnival tournament in All Japan was a round robin format (every participant meeting each other.) The wrestlers with the 2 highest point totals would meet in the finals. It was amazing how Giant Baba would book this in the early 90s, where every match meant something. Many times, the tourney champion would defeat the Triple Crown champion during the tournament, setting up a title challenge down the road.
All Japan's annual Real World Tag Team Tournament was booked in a similar manner. For a period of about five years (1991-1996?), the Double Tag Team Champions (All Japan International & PWF World titles) would surrender their belts prior to the tournament and the winners would also get the tag team championship.
New Japan has conducted the G1 Climax tournament in a similar format. Usually 8 wrestlers compete in an "A" and "B" block (4 wrestlers in each), with the winners of each block meeting for the championship. They have also run this tournament in a single elimination format, like in 1992 when Masa Chono beat Rick Rude in the finals, which doubled as a tourney for the revived NWA World title.
The Super J Cup has usually been run as a single elimination format. The Top of the Super Junior tourney (hosted by New Japan, but they usually invite some "outsiders") varies from year to year in terms of single elimination vs. round robin.
If you're looking for a good sample of heavyweights and juniors in a tournament, try tracking down the 1996 G1 Climax tourney on video. Besides having the regular round robin tournament, the cards also feature the title unification tournament that formed the J-Crown championship. These matches ran on New Japan's weekly TV show from mid-August to mid-September 1996.
