So I was thinking about trying to do a 2 ring battle royal (or 2 ring tag matches) after watching some old St Louis and World Class shows... does anyone already have something like this?

A while back David Barnes created a Double Ring Battle Royal Chart. The 'Double Team' scenarios were based off of rolling two '4' sided dice (so the numbers alongside the roll outcomes may have to be re-worked). Other than that there's plenty of room to make creative adjustments while still preserving the core of the double ring outline he developed.
I also recommend checking out Justin Sanudo's 'Big Man' Chart (listed below). Realistically the big man should have some special advantages that are taken into account when smaller wrestlers go for eliminations...especially with two rings involved.

2-RING AETHRAN ESCAPE BATTLE ROYAL DESCRIPTION: This match was originally created as a final
match in SURVIVALCADE, an IS-EP supercard. However, the
card never came about, but I've kept the match for use
at a later time. This is the ultimate ring war battle
the heroes and the villains. Two rings, side by side, are
surrounded by a steel cage (just like WCW's WAR GAMES).
The object is for one side, either the heroes or the
villains. to escape the cage.
RULES:1. Wrestle one-on-one as you normally would in any other
match. (Assume that other action is going on in the
ring at the same time.)
2. INTO THE ROPES becomes a DOUBLE TEAM ATTEMPT. Refer
to the Double-Team chart below. INTO THE TURNBUCKLE
becomes CRASH INTO TEAMMATE-3
3. OUT OF THE RING--Roll both dice. If the roll is 7 or
doubles, you throw your opponent into the other ring,
where you continue your assault on Level 3 Offense;
otherwise, substitute HEAD INTO CAGE-3.
4. If you don't successfully escape the cage, assume
other opponents have pulled you back into the cage.
5. Despite the fact that this match is part "Aethran Escape,"
there are NO pin saves as this is NOT a tag team match.
6. The first team to have all of their members escape
the cage is declared the winner.

DOUBLE TEAM CHART
(Roll 2d4)2 You and a team member deliver a double dropkick that
sends the opponent flying into the cage. ROLL ON LEVEL 2 OFFENSE.
3 You and your tag team partner (or another team member, if
your partner is not in the cage) deliver a spike piledriver.
OPPONENT ROLLS CAGE RATE.
4 You grab the opponent's arms from behind so your
teammate could deliver a punch to the face, but you are
clubbed from behind by one of the opponent's teammates.
OPPONENT TAKES OVER ON LEVEL 2 OFFENSE.
5 You and a teammate attempt a double clothesline near the
ropes, but your opponent ducks, bounces off the opposite
ropes, and delivers a double clothesline of his own which
sends both of you flying into the other ring, where he
continues his assault. OPPONENT ROLLS ON LEVEL 3 OFFENSE.
6 Your opponent throws you over the top rope, into the
cage. While you're falling down, you manage to tangle your
neck in between the ropes. His teammate grabs your legs
and stretches you out so your opponent can drop an elbow
on you from the top turnbuckle. ROLL CAGE RATE (+4).
7-8 You and a teammate deliver a double back-body drop
into the waiting arms of a third teammate, who executes
a well-timed power bomb. ROLL ON LEVEL 3 OFFENSE. (If
you and/or one other teammate are the only one
remaining
in the cage from your team, roll again on this chart until
you get a different instruction.)
CREATOR'S NOTE: If you wish to hold your own SURVIVALCADE
supercard here's all you do:
1. Hold Survivor Matches, pitting all of your feuding teams
against one another (i.e. GENESIS vs. COLONIZERS OF SCORPI).
2. The surviving members of each team go on to the 2-Ring
Aethran Escape Battle Royal.

Big Man Battle Royal Chart
I have always hated it when a little guy throws out a
big guy with no problem in battle royals. In my recent
Galactic Royal Battle (Royal Rumble), Tristan threw
out Paralyze. That is when I decided to do a Big Man
chart for a battle royal. Use this card when someone
with less than a -4 pw tries to throw out a wrestler
with a -4 pw or greater.
2-3 The offensive wrestler has the big man on the
ropes, only if he could get some help to throw his
opponent out.
If there are 3 more wrestlers in the ring, the
offensive wrestler is able to throw out his opponent.
If there are not 3 more wrestlers in the ring, opponent
fingers him in the eye. Opponent takes over on level 2
offense.
4-5 The offensive wrestler has the opponent tangling
on the turnbuckle. Just a little more help and he can
toss the opponent out.
If there are 2 more wrestlers in the ring, the big
man goes over the top rope, hitting the floor.
If there are not 2 more wrestlers, the opponent is
able to get off the turnbuckle, wrestler on offense
rolls on level 2 offense.
6 With a great show of strength, the wrestler on offense
has the big man up. Can he finish the job?
If the offensive wrestler has -2 strength or better,
he picks up the heavyweight and is able to dump him
over the top rope.
If the offensive wrestler has strength less than -2,
then the offensive wrestler is unable to dump the
big man over. Offensive wrestler continues on
level 3 offense.
7-10 The offensive wrestler has the big man leaning
on the ropes. The offensive pounces off the opposite
ropes and hits a massive clothesline, sends the
heavyweight over the top rope and to the floor.
11-12 The offensive wrestler has the big man leaning
on the ropes. The offensive wrestler bounces off the
opposite ropes, looking to hit the heavyweight with
a massive clothesline. However, the big man ducks,
sending the offensive wrestler over the top rope
and hitting the concrete floor.
