When she misses her finisher, is it assumed her opponent attacks on Level 3 Offense? It doesn't say so on the card or in the handbook, but I would assume (and have assumed since she has YET to hit it in my fed) that would be the case.

Yes, that is ALWAYS the default result for any missed finisher unless otherwise stated...that the opponent rolls on L3O.
